Breakfast ideas:
- scrambled eggs
- hard boiled egg
- chex cereals (Rice Chex, Corn Chex, Chocolate Chex, Cinnamon Chex, Honey Nut Chex) but NOT Wheat Chex...and make sure it's the General Mills name brand, but if it is an off brand, check to make sure the box says "gluten free"
- fruit: fresh or frozen
- Gluten free pancakes or waffles from some yummy mixes: Bob's Red Mill; Pamela's Baking Mix
- breakfast burrito: Warm up Mission Corn Tortilla shells in the skillet, then add shredded cheese and scrambled egg; you can also add things like gluten free ham cubes, gluten free precooked bacon, onion, bell pepper slices or whatever else you want to make it fun!
- Add "Enjoy Life nut and gluten free granola" to your favorite yogurt. "Bakery on Main" and "Trader Joe's' also makes a good granola.
- "Udi's" makes a cinnamon raisin gluten free bread....found in the frozen food section at Hy-Vee's Health Market.
- Gluten free toast (Udi's) with apple butter, butter, peanut butter, jelly... or my kid's favorite topping: butter and cinnamon sugar!
- Gluten Free waffles
- gluten free bacon or sausage
- Envirokidz cereals
- GF Oats (although widely recommended to avoid oats during the first 6 months/1 year of going gluten free) You can get a bag of GF oats for only $4 at Trader Joe's.
- Smoothies
Lunch ideas:
- salad with grilled chicken
- lunch meat (Hormel Natural Choice lunch meats states on the box, "gluten free") rolled up plain, or rolled up in a lettuce wrap. Add a squirt of your favorite salad dressing to give it a zip! I also sometimes will add bell pepper strips to the lunchmeat and salad dressing rolled up inside a lettuce wrap.
- Baked Potato
- Quesadillas/tortilla shell wraps: Mission Yellow or White Corn Tortilla shells, warmed slightly on a skillet, (I do NOT recommend eating them without cooking them first!) about 20 seconds per side (or more, depending on how you like them), add shredded cheese (if you can do dairy) and add lunchmeat. Then I add either another tortilla shell on top and cook for another few seconds until warm, flipping it. Or,use one tortilla shell, fold it over and eat it like a taco. Other things you can add to your quesadilla: barbeque sauce (my personal favorite is Sweet Baby Ray's), or gluten free ranch dressing, lettuce, bell pepper strips, or tomatoes....
- Sandwiches: Use Udi's gluten free bread (found in frozen section). I have also heard good things about Schar's gluten free bread; and if you are wanting to make your own bread, Gluten Free Pantry makes a good mix. Rudi's gluten free bread (found in frozen section) is also yummy. Note: Rudi's also makes regular bread, so make sure the package says, "gluten-free"! I always toast the bread. Another GF bread that doesn't need toasting is Canyon House Bakery breads—found at the bakery section at SuperTarget
- A few of the Progresso soups are gluten free.
- Trader Joe's has a box of gluten free rice pasta mac and cheese.
- Annie's has GF mac & cheese
Snacks:
- peanut butter with celery
- almonds (make sure they don't contain gluten, as sometimes nuts do...)
- raisins/craisins
- Snyder's of Hanover Gluten Free pretzels (make sure the bag says "gluten-free")
- Trail mix of gluten free nuts, raisins, pretzels, and chex cereal
- fresh fruit
- veggies and gluten free ranch dressing
- Envirokidz snack bars
- Enjoy Life cookies/snack bars
- Larabars
- Popcorn (the air-popped kind); otherwise a gluten-free popcorn (read the label to make sure it doesn't contain wheat/barley/oat/rye)
- Van's GF crackers
- Quaker Rice cake (Lightly salted) with peanut butter
Easy, Simple Dinner ideas:
- Spaghetti with gluten free pasta
- Tacos. Use Mission corn tortilla shells.
- Baked chicken breast. Top with barbeque sauce or chili sauce.
- Pork chops cooked in the skillet with some oil. Season to taste.
- Pork or Beef Roast in crockpot with potatoes, onions and carrots
- Hamsteaks with pineapple
- Perdue Simply Smart (frozen section) makes some good chicken strips
- Tyson has come out with GF chicken nuggets (frozen section)
- Chicken stir-fry. Make sure soy sauce is GF. Or, skip the soy sauce and just cook Trader Joe's sweet chili sauce with your chicken, veggies and rice.
- Italian chicken: Cooked cubed chicken, a bag of frozen veggies/or fresh veggies, Italian dressing. heat together on the stove, then add some cheese
- Brown pork chops, then place in crockpot and cover with Trader Joe's sweet chili sauce and cook on low heat for a couple of hours.
